Carpathians Cake - a mountain of goodness for sweet tooth

This is a wonderful cake that has been sold in Romanian confectioneries for a long time, but it tastes even better when made at home

So here’s what you will need to make the Carpathians Cake.

For the sheets: 3 eggs, 1 cup of sugar, 1 cup of oil, 1 cup of milk, 1 teaspoon of sodium bicarbonate and flour.

For the filling: 1 kg of sugar, 2 l of milk, 5 tablespoons of water, 16 tablespoons of flour, 2 packets of margarine and rum essence.

First, we make the sheets. We mix the eggs and the sugar and then we add the milk and the oil in gradually, the bicarbonate and as much flower as is needed. We knead the composition and we separate it into ten pieces.

We spread a sheet with the roller onto a tray that we have smeared with oil beforehand and we put it in the oven. We do the same with the rest of the 9 pieces of dough.

In order to make the filling, we start out by melting the sugar in a pot together with the water. We add the flour gradually, stirring the composition continually. We add the milk gradually as well and with care, because it will swell up from the heat.

Once the cream has thickened, we take it off the stove and add the margarine and the rum essence. We blend everything with the mixer or we stir it energetically.

Putting the cake together should be done meticulously, because its shape is what gives it its name, that of the Carpathian Mountains. We start by spreading the cream on a sheet, putting another sheet on top and spreading some of the cream onto this one as well. We do the same until we reach the last sheet. We do not put any cream on the last and we must make sure to save a cup of the filling in order to stick the pieces of the cake together.

We put something heavy on top of the cake in order to press it down and we put it in the fridge until the next day. On the next day, we cut the edges of the cake and then we separate it into three equal parts. Each piece is the cut in half, but in a diagonal, so as to obtain two triangle-shaped pieces.

We put the triangles with the peaks pointing up and we stick them together with some of the filling so as to form a mountain. Once we have the same with the other two parts of the cake, we coat them with a thin layer of filling. Then we sprinkle some coconut flakes onto it, so as to make it look as though the mountains are covered in snow.
