Moldovan Butchery - a successful combination of the traditional butchery and bistro concept

The Moldovan Family have been in the meat business since 1994, but last year they became a household name in Cluj Napoca by revolutionizing the concept of the butcher’s shop.

Owner Cosmin Moldovan’s took the traditional butcher’s shop and made it into a /bistro type of thing. This means that you can buy a piece of fresh meat and have the butcher cook it for you as well, right then and there. Thanks to this transformation, the Moldovan Butchery is earning a warm place in the heart of Cluj dwellers and is becoming one of the most successful businesses in the city.

Cosmin Moldovan and his father have been in the meat business for over 20 years, having had a slow but certain growth. They started out only with a few types of meat and a small shop, to become – through passion and constant innovation – one of the most beloved firms in Cluj-Napoca. Now they have 27 shops in Cluj County, of which 3 are /bistros.

The idea behind Moldovan’s butchery concept was to create a friendly environment, where customers could not only buy meat but also dine, where they could get advice on how to cook the meat and on the type of wine they should serve it with, and where the butchers were not only vendors, but people with real expertise in both butchery and cooking.

Cosmin Moldovan has his own farm, which is where all the meat comes from, and his own meat factory. He says that customers can buy his products with complete confidence, because it comes from animals bred locally and because the produce are made after traditional recipes that ensure their quality. What is more, the butchery/bistros receive fresh meat three times a day.  

Moldovan says he has had many requests to open shops in other cities in Romania and even abroad, but refused. His desire is to remain local so that every aspect of the business can be in better control. He also believes that this is the best way to offer customers a quality of service that cannot be guaranteed when the firm becomes too big.

In a city currently on the rise, as Cluj-Napoca is, the Moldovan Butchery is an emblematic store. With its 21st century technology and approach to business doubled by a respect and love for tradition and quality, it is certain to gain lots of loyal customers in the years to come.
