Choosing the right flour, kneading the dough properly, allowing enough time for it to rise and using the correct oven temperature are some of the key elements that make the difference between an ordinary loaf and a successful one.

For a tasty, well-risen loaf, it is important to weigh the ingredients carefully and give the dough enough time to ferment. There is no need to rush the process: proper proofing contributes both to the texture of the crumb and to the final flavor.

Homemade bread recipe

Ingredients:

  • 500 g white wheat flour

  • 350 ml lukewarm water

  • 7 g dry yeast

  • 10 g salt

  • 1 teaspoon sugar

  • 1 tablespoon olive oil, optional

Method:

Place the flour in a bowl and add the yeast and sugar. Gradually pour in the lukewarm water while mixing the ingredients. Add the salt once the dough starts to come together. Finally, add the olive oil if desired.

Knead the dough for approximately 8–10 minutes, until it becomes elastic and is no longer very sticky. Shape it into a ball, cover the bowl and leave it to rise in a draft-free place for approximately 1–2 hours, until it has visibly increased in volume.

After the first rise, turn the dough out onto a work surface and gently shape it. Form a round or oval loaf and place it on a baking tray lined with parchment paper. Cover it again and leave it to rise for another 30–45 minutes.

Meanwhile, preheat the oven to 230°C. Before baking, the top of the loaf can be scored with a sharp knife. These cuts allow the dough to expand in a controlled way during baking.

For a crispier crust, place a small oven-safe tray containing water in the oven during the first 10–15 minutes of baking to create steam. Bake the bread at 230°C for approximately 15 minutes, then reduce the temperature to 200°C and continue baking for another 20–25 minutes, until the loaf is well browned.

Once baked, remove the bread from the tray and place it on a wire rack to cool. It is best not to cut it immediately, as the crumb needs time to set as the bread cools.

Tips for a successful homemade loaf

Choose the flour according to the type of bread you want to make. The amount of water may need to be adjusted slightly depending on how much liquid the flour can absorb. Avoid adding large amounts of extra flour simply because the dough feels sticky, as this can result in a dense loaf.

The temperature of the water is also important. It should be lukewarm rather than hot, as excessive heat can affect the yeast. Proofing time should not be treated as an exact fixed duration either: room temperature and yeast activity can influence how quickly the dough rises.

 

A successful homemade loaf is, above all, a matter of patience. With simple ingredients, careful preparation and a properly preheated oven, the result can be an aromatic loaf with a crisp crust and a soft, airy crumb.
