Ossobuco is one of the most iconic dishes of Italian cuisine, loved for its tender meat, rich sauce and the marrow inside the bone, which gives the dish its distinctive flavor.

The dish originates from Lombardy, particularly from the area around Milan, where ossobuco alla milanese became one of the defining recipes of the local cuisine.

The name “ossobuco” comes from the Milanese dialect and literally means “bone with a hole”, referring to the bone in the center of the veal shank and the marrow inside it.

Over time, many variations of the dish have emerged, but the basic principle remains the same: thick slices of veal shank are browned and then slowly cooked in a flavorful sauce until the meat becomes so tender that it easily comes away from the bone.

Ingredients for Ossobuco

For 4 people:

  • 4 thick slices of veal shank with the bone

  • flour, for coating the meat

  • 1 onion

  • 1 carrot

  • 1 celery stalk

  • 2–3 cloves of garlic

  • 2–3 tablespoons of olive oil

  • 1 glass of red wine

  • approximately 400–500 ml beef stock

  • 2–3 tablespoons tomato paste or tomato sauce

  • salt

  • black pepper

  • a little rosemary

  • 1–2 bay leaves

For extra freshness, you can prepare a gremolata at the end using parsley, garlic and grated lemon zest.

How to Prepare Ossobuco

The first step is to prepare the meat. Pat the veal shank slices dry with kitchen paper, then coat them in flour on all sides. Shake off any excess flour.

Heat the olive oil in a heavy-based pot suitable for both the stovetop and the oven. Brown the meat well on both sides until it develops a golden crust. This step is important for building the flavor and aroma of the dish.

Once the meat is browned, add the onion, carrot and celery, all finely chopped. Cook the vegetables for a few minutes over medium heat, until they soften and begin to caramelize slightly.

Add the garlic, then shortly afterwards pour in the red wine. Allow it to cook for a few minutes so that the alcohol evaporates and the liquid reduces slightly.

Add the tomato paste or tomato sauce, beef stock, salt, pepper, rosemary and bay leaves. The liquid should come approximately halfway up the meat without completely covering it.

Cover the pot and cook over low heat on the stovetop for approximately one hour. Slow cooking allows the flavors to develop while the meat begins to become tender.

After the first hour, transfer the covered pot to a preheated oven, where the ossobuco should continue cooking slowly for approximately 3 hours. The temperature should remain moderate, allowing the meat to cook gradually while the sauce becomes rich, thick and flavorful.

At the end of cooking, the meat should be extremely tender, while the marrow inside the bone should be soft and creamy.

How to Serve Ossobuco

Ossobuco can be served with your preferred side dish, but in the Milanese tradition it is classically paired with risotto alla milanese, prepared with saffron.

Before serving, you can add gremolata, a mixture of finely chopped parsley, garlic and grated lemon zest. The citrus notes and freshness of the parsley balance the rich sauce and the slow-cooked meat.

The result is a hearty and aromatic dish in which tender meat, vegetables, red wine and marrow come together to create an intensely flavorful sauce, perfect with fresh bread or served alongside rice.
