Christmas is associated with many culinary traditions, and homemade cookies hold a special place in holiday preparations. The aroma of cinnamon, cloves and ginger, combined with honey and a delicately spiced dough, creates the distinctive flavour of gingerbread, one of the best-known treats of the winter season.
Making Christmas cookies is also an activity that brings families together. The dough can be cut into stars, Christmas trees, hearts and gingerbread men, while the baked cookies can be decorated with sugar icing.
Although recipes vary from one country to another, gingerbread has a long history in Europe, where honey and aromatic spices have been used in sweet preparations for centuries.
Ingredients for Traditional Gingerbread Cookies
This recipe makes approximately 30–40 cookies, depending on the size of the cutters.
350 g all-purpose flour
120 g honey
100 g brown sugar
80 g butter
1 egg
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground cloves
A pinch of salt
For the optional icing:
100 g icing sugar
1–2 teaspoons lemon juice or water
Method
1. Prepare the wet ingredients
Place the butter, honey and brown sugar in a saucepan and heat over low heat, stirring until the butter has melted and the mixture is smooth. There is no need to bring it to a boil. Allow the mixture to cool before adding the egg.
2. Make the dough
In a separate bowl, combine the flour, baking soda, cinnamon, ginger, cloves and salt. Add the honey mixture and the egg, then stir until a uniform dough forms.
If the dough is too soft to roll out, cover it and refrigerate for approximately one hour. Chilling will make it easier to handle and cut into shapes.
3. Cut out the cookies
Preheat the oven to 180°C (350°F). Lightly flour your work surface and roll out the dough to a thickness of approximately 4–5 mm.
Cut out the cookies using festive-shaped cutters and arrange them on a baking tray lined with parchment paper, leaving a little space between each cookie.
4. Bake the cookies
Place the tray in the preheated oven and bake for approximately 8–12 minutes, depending on the thickness of the cookies and your oven.
Remove them when the edges begin to turn lightly golden. The cookies may still feel soft immediately after baking, but they will firm up as they cool. Avoid overbaking if you prefer a more tender texture.
5. Decorate the cookies
Once the cookies have cooled completely, mix the icing sugar with a little lemon juice or water until the icing is thick enough for decorating.
Transfer the icing to a piping bag or a food-safe plastic bag with a very small corner cut off. Decorate the cookies as desired, then allow the icing to set before storing them.
How to Store Christmas Cookies
Once completely cooled, the cookies can be stored in an airtight container in a cool, dry place. Their texture may change over the following days, depending on the ingredient proportions and baking time.
For the best results, keep them away from moisture and sources of excessive heat.
A Timeless Tradition That Brings the Flavours of Christmas into the Kitchen
