Plum tart is one of those simple recipes that transforms a handful of everyday ingredients into a delicious treat, combining sweet, juicy fruit with a buttery, crisp pastry crust.

Ingredients
For the pastry:
250 g all-purpose flour
125 g cold butter
80 g sugar
1 egg
A pinch of salt
1 teaspoon vanilla sugar
For the filling:
600–700 g ripe plums
2–3 tablespoons sugar
1 teaspoon cinnamon
1 tablespoon breadcrumbs
Powdered sugar, for serving
Method
Start by preparing the pastry. Place the flour in a large bowl and add the cold butter, cut into small cubes. Rub the butter into the flour with your fingertips until the mixture resembles coarse crumbs.
Add the sugar, salt, vanilla sugar and egg, then mix until the dough comes together. Shape it into a ball, wrap it and refrigerate for about 30 minutes.
Meanwhile, wash the plums, remove the stones and cut them into halves or slices. Place them in a bowl and gently mix with the sugar and cinnamon.
Remove the dough from the refrigerator and roll it out on a lightly floured surface. Transfer it to a tart tin and gently press it into the base and sides. Prick the bottom several times with a fork, then sprinkle the breadcrumbs over the pastry. They will absorb some of the juice released by the plums and help keep the pastry crisp.
Arrange the plums over the pastry, cut side up. Sprinkle with a little extra sugar and cinnamon if desired.
Bake the tart in a preheated oven at 180°C for approximately 40–45 minutes, or until the pastry is golden brown and the plums are soft and lightly caramelized.
Allow the tart to cool before slicing. Dust with powdered sugar just before serving.
