Original Recipe for Peach and Almond Tart
Ingredients for the crust:
- 250 g flour
- 125 g cold butter
- 80 g sugar
- 1 egg
- a pinch of salt
Ingredients for the filling:
- 4–5 ripe peaches
- 200 ml fresh whipping cream
- 2 eggs
- 80 g sugar
- 1 packet vanilla sugar
- 1 tablespoon starch
Preparation:
Mix the flour with the sugar and salt, then add the cold butter cut into cubes. Quickly work the mixture until it becomes crumbly and sandy.
Add the egg and knead until a smooth dough forms. Let it rest in the refrigerator for about 30 minutes.
Meanwhile, wash the peaches and cut them into thin slices.
Roll out the dough into a tart pan and lightly prick the bottom with a fork.
Mix the eggs with the sugar, vanilla sugar, cream, and starch until smooth and creamy.
Arrange the peach slices over the crust, then pour the cream mixture on top.
Bake the tart at 180°C (350°F) for 35–40 minutes, until golden brown.
Allow it to cool before serving.
