Origin and Role in Romanian Cuisine

Traditionally, stews hold a central place in Romanian gastronomy. They emerged from the need to slowly cook simple, locally available ingredients in order to create nourishing meals. Mushroom stew is closely linked to hilly and mountainous areas, where wild mushrooms (porcini, chanterelles, honey fungus) were foraged and preserved for the cold season.

As a fasting dish, mushroom stew is commonly prepared during periods such as Lent and the Christmas fast, but its rich flavor makes it popular all year round.

Traditional Mushroom Stew Recipe

Ingredients (for 4 servings):

  • 500–700 g mushrooms (button mushrooms or wild mushrooms)
  • 2 large onions
  • 2–3 tablespoons oil
  • 1 tablespoon tomato paste or 2 chopped tomatoes
  • 2–3 cloves of garlic
  • 1 bay leaf (optional)
  • Salt and pepper to taste
  • 1 teaspoon sweet paprika
  • Fresh herbs (parsley or dill)
  • 100 ml water or vegetable stock

Method of Preparation

Preparing the ingredients
Clean the mushrooms and slice them or cut them into larger pieces. Finely chop the onions and crush the garlic.

Sautéing the base
Heat the oil in a pan or pot and sauté the onions over low heat until translucent. Add the garlic for extra flavor.

Adding the mushrooms
Add the mushrooms over the onions and let them cook down. They will release water, and the dish will begin to develop its consistency.

Seasoning
Add the paprika, tomato paste (or tomatoes), bay leaf, salt, and pepper. Mix well.

Simmering
Pour in a small amount of water or stock and let it simmer on low heat for 15–20 minutes, until the sauce reduces and thickens.

Finishing
Sprinkle with freshly chopped herbs and turn off the heat.

How to Serve

Mushroom stew is served hot, most often accompanied by:

  • warm polenta
  • homemade bread
  • pickles (cucumbers, green tomatoes, sauerkraut)
