During the summer, as the first sunny days arrive, Romania's parks, forests, and recreational areas fill with people who choose to spend their weekends outdoors. The aroma of burning wood and meat sizzling over glowing embers is an essential part of these gatherings, where conversations, music, and laughter come together to create an authentic experience.

No meal is complete without side dishes and local specialties. Fresh tomato salad with onions, cucumbers, and herbs, homemade pickles, baked potatoes, and fresh bread are always present. In many regions of the country, meals are accompanied by local cheeses, homemade sauces, and traditional desserts, turning a simple lunch into a true culinary celebration.

More than the food itself, a Romanian barbecue is about people. It is the moment when different generations gather around the same table, tell stories, laugh, share memories, and create new ones. Children play outdoors while the adults prepare the meal together, and time seems to slow down. No special occasion is needed to light the grill; all it takes is a beautiful day, a few friends, a close-knit family, and the desire to spend time together.

In Romania, a barbecue is much more than an outdoor meal. It is a symbol of friendship, community, and the joy of sharing simple yet precious moments. In a world where time seems to pass faster every day, the tradition of the Romanian barbecue reminds us that the best memories are made around the fire, a table full of delicious food, and the people we love.

Among the must-have dishes are the famous mici (Romanian grilled sausages), considered one of the symbols of Romanian cuisine, alongside grilled pork neck, traditional sausages, meat and vegetable skewers, marinated chicken drumsticks, and tender pork ribs. Vegetables such as bell peppers, zucchini, eggplants, mushrooms, and corn on the cob are also frequently grilled, making the meal even more complete.

Ingredients for approximately 20 mici

  • 500 g ground beef

  • 300 g ground pork

  • 200 g ground lamb (optional, for a more authentic flavor)

  • 5–6 cloves garlic, crushed

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon dried thyme

  • 1 teaspoon sweet paprika

  • 1 teaspoon baking soda

  • 250 ml very cold beef bone broth or sparkling mineral water

  • 2 teaspoons salt

  • 1 teaspoon ground coriander (optional)

Combine all the meats in a large bowl. Add the garlic, salt, black pepper, thyme, paprika, and the remaining seasonings. Dissolve the baking soda in the cold broth or sparkling mineral water, then gradually incorporate it into the meat mixture.

Knead the mixture vigorously for 10–15 minutes until it becomes smooth and slightly elastic. This is one of the secrets to making tender and juicy mici.

Cover the bowl and refrigerate for at least 12 hours, preferably overnight, allowing the flavors to blend perfectly.

Before grilling, wet your hands with water and shape the mixture into rolls approximately 8–10 cm (3–4 inches) long and 2–3 cm (¾–1¼ inches) thick.

The grill should be thoroughly preheated, with an even bed of hot coals. Grill the mici for about 10–12 minutes, turning them frequently to ensure they brown evenly while remaining juicy on the inside.

Serve the mici hot, straight from the grill, with:

  • classic mustard;

  • fresh bread or bread rolls;

  • French fries or baked potatoes;

  • tomato and onion salad;

  • homemade pickles;

  • hot chili peppers, for those who enjoy spicy food.
