A Dish Rooted in Easter Tradition

Religion continues to play an important role in Romanian culture, especially during major Christian holidays. Drob de miel is traditionally prepared for Orthodox Easter, when families gather to celebrate the Resurrection of Christ.

The lamb holds deep symbolic significance in Christianity, representing sacrifice, purity, and renewal. As a result, many traditional Easter meals include lamb dishes, with drob being among the most popular and recognizable.

Although strongly associated with Easter today, recipes using offal have existed throughout Europe for centuries. Romanian drob reflects the traditional practice of using every edible part of the animal, a sustainable approach that has long been part of rural cuisine.

History and Origins

Food historians believe that drob evolved from traditional shepherd and peasant cooking. Romanian shepherd communities made extensive use of lamb during springtime, preparing nourishing dishes from ingredients that were readily available after the Easter sacrifice.

Unlike Scottish haggis, which is cooked inside a sheep's stomach, Romanian drob is baked as a loaf or terrine. Traditionally, the mixture is wrapped in caul fat (also known as lamb caul), although many modern recipes use puff pastry, filo pastry, or simply bake the mixture without any wrapping.

Today, drob remains one of the defining dishes of Romanian Easter celebrations and is enjoyed both at family meals and festive gatherings.

Ingredients

A classic recipe serves 6–8 people and includes:

  • 500–700 g lamb offal (liver, heart, lungs and kidneys)

  • 2–3 hard-boiled eggs

  • 2 raw eggs

  • 1 slice of bread soaked in milk or 2–3 tablespoons breadcrumbs

  • 4–5 spring onions

  • 1 bunch fresh parsley

  • 1 bunch fresh dill

  • Optional: lovage or green garlic

  • 1 tablespoon sour cream (optional)

  • Salt and freshly ground black pepper

  • Lamb caul fat (traditional), or filo pastry as an alternative

  • Butter or oil for greasing the baking tin

Preparation

Boil the lamb offal in lightly salted water until fully cooked, then allow it to cool completely.

Finely chop or mince the cooked meat. Add the chopped spring onions, parsley, dill, and any additional herbs. Mix in the soaked bread or breadcrumbs, the raw eggs, sour cream (if used), salt, and pepper until the filling is well combined.

Grease a loaf tin or baking dish. Line it with the lamb caul fat if using. Spread half of the mixture into the tin, arrange the hard-boiled eggs lengthwise in the center, then cover with the remaining mixture. Fold the caul fat over the top if necessary.

Bake in a preheated oven at 180°C (350°F) for approximately 40–50 minutes, or until the top is golden brown and the center is fully cooked.

Allow the drob to cool slightly before slicing. It can be served warm or cold and is traditionally accompanied by fresh spring vegetables, horseradish, mustard, and homemade bread.

Modern Variations

While lamb remains the traditional choice, many Romanian families prepare drob using chicken, turkey, or mixed poultry offal. Vegetarian versions made with mushrooms, spinach, or lentils have also become increasingly popular in recent years.

Regardless of the variation, drob continues to be one of Romania's most beloved Easter specialties and an enduring symbol of family gatherings, seasonal ingredients, and culinary tradition.
