Ingredients:
- 1 kg potatoes
- 250 gr flour (a little more flour to be used for the work surface and to flour your hands)
- 2 eggs
- 1 tablespoon oil
- Sale to taste
Filling:
- 15-20 pieces plums
- 3-4 tablespoons sugar
- 1 teaspoon cinnamon
Coat:
-250g Breadcrumbs
- 50 gr Butter
- 1 teaspoon cinnamon
Preparation:
First wash and pit the plums. Prepare a mixture of sugar and cinnamon and fill the plums with it. Wash the potatoes and, without peeling them, put them to boil in a pot with salted water.
When the potatoes are soft enough, drain and peel them while still hot and put them on a well-floured work surface. Mash the potatoes directly on the flour previously disposed as a fountain on the work surface and add the beaten eggs. Knead everything when you have added all the ingredients, and while the potatoes are still warm, in order to facilitate the assembly.
Cut a piece of the dough and form loaf thickness of a finger from which cut about 2 cm thickness pieces with which you will coat the plums.

Melt the butter in a pan and add the breadcrumbs, the sugar and the cinnamon, stirring constantly so that it homogenizes all right. Turn off the fire and held it close to the pot.

Fill a large and spacious pot with water, add salt and bring to boil. Immerse the dumplings in boiling water after removing the excess flour. They are ready when they come completely to the surface.
Remove them from the pot with a slotted spoon one by one to not ruin them and put them in the pot with bread crumbs previously prepared. Dredge them through the breadcrumbs and put them on a tray.
